Noma’s take on a classic cold brew ☕️ Developed for long Danish summer days, this version is seasoned with our Wild Rose Vinegar and elderflower syrup. It’s delicate and floral, but concentrated enough to hold its own over plenty of ice. Start it the day before you plan to serve it, then strain and enjoy it cold!

Often involving a 45-degree angle ascent, the way up to Luis’ coffee trees is hard going at the best of times. On our last visit, we braved heavy rains to visit the plots at the top of the mountain. Thankfully we had some help making our way 🐕

Last year, we asked Luis to separate his Ombligón from the rest of his field blend. These are cherries that are grown at the very highest point of his farm. He bought this plot –his first- from his neighbour who was happy to let it go as it was so difficult to work. This turned out to be a blessing in disguise – as the high altitudes contribute to more complex flavors.

Our Head Roaster, Alastair, is a bit of a mystery. That’s why it’s fitting that he tasted the equally mysterious Ombligón this month.

Farmed by Luis Alberto Jojoa in the highlands of Huila, Colombia, this delicate variety is one of the rarest we’ve brewed at Noma Kaffe — so unique that its precise origins are unknown.

invited our team and guests to taste the very first Wild Rose Vinegar of the season—a fleeting expression of Danish summer, made from hand-foraged wild roses gathered across the country at their peak.

Light, fragrant, and remarkably versatile, it’s one of the products we look forward to crafting every year.

Wild roses are one of our most beloved flavors. We value their versatility, their aroma, and their fleeting nature. Because they’re only around for a few weeks each year, we preserve them in several ways: as a salt (with ants!), as a vinegar, and as an oil.
