Für alle Caterings, Events, Retreats oder sonstige Feierlichkeiten gibt es von mir Denkanstöße, Achtsamkeitsübungen oder spielerische Aktivitäten mit dazu. Ohne diesen Teil gibt es mich nicht zu kaufen sozusagen, denn mein Steckenpferd ist genau das: aus dem Essen ein Erlebnis zu machen und zwischenmenschliche Beziehungen zu fördern. Mornings like these. I had a hard time finding inner peace in the last months and weeks and even when I knew vacation was approaching it stressed me out even more - things to think about, projects that couldn’t be finished, new projects that wouldn’t be started during that time. But finally today I seemed to have arrived in vacation mode. After a long uninterrupted sleep I woke up and 7 am and felt the positive energy - not the anxious rumbling - came back.

Why am I showing you this part of my bedroom today? Because I want to talk about atmosphere. The bedroom has always been the room I painted first when I moved into a new apartment and in our current home it’s the color I like the most because it’s soothing and joyful at the same time - the color changing with the time of the day and the light. I created an atmosphere.
When I talked to fellow freelancers and friends last week I realized again that this account needs some clarification. A friend told me: “you’re not a real food account“, no I’m not and that hasn’t been my goal either but I guess that’s difficult to figure out if you don’t know me. I’m an interdisciplinary creative in the field of food and design - I studied Food Design and see the magic happen at the intersection of things. That’s where atmosphere lies for me. It’s not just color but it’s the full sensory experience of what I smell, the story I want to tell, the artisans who create the things I’m surrounded with. And talking about weddings, birthdays and gatherings, the atmosphere is what makes you feel good in an environment, at a party.

A friend asked me if I ever experimented with gluten-free baking so I took it as a challenge and pulled this rice and oat loaf out of the oven yesterday night. For a first attempt, I’m happy to see it held together without the use of chemical stabilizers but would wish for a slightly fluffier crumb if that’s possible in gluten free baking. Any experiences?

Because Corona happened the team behind the beautiful Offsite space in Vielitz couldn’t open the doors of the newly renovated building yet. I wanted to bake one toast bread and then it became two. No, actually, the truth is that I forgot the bread on the counter, so it was too late to put it in a basket to prove. I then just transferred it into a baking tin and made a sandwich bread of it. The Kamut flour gave it this wonderful color and a pleasant nutty taste. There are Croque Monsieur Sandwiches on the menu today.

Cheers! It’s one of those treat days I spent in full culinary joy: first a rice porridge with eggs and homemade furikake, then after a walk in the sun we went for delicious ice cream at @parcreamery and lastly stopped at @otto_berlin to get some pantry items to enrich our dinner plans. Now I’m sitting in the evening sun of my balcony enjoying this organic Spritz and waiting for the potatoes to grill on the barbecue.

Waffles or pancakes for breakfast? I also bake waffles when there is too much sourdough, I then mix it into the batter and get creative with the rest of the ingredients: whole grain flour or white flour, sugar or infused syrup, oil or butter, milk or cream cheese.

Here is a recipe of a pretty tasty trial:

150g active refreshed sourdough, 400g whole wheat flour, 250g whole fat Quark, 500ml milk, 3 egg yolks, 100g sugar, a pinch of salt, 100ml olive oil. Leave to raise over night in the fridge and add 2 tsp of baking soda the next morning, bake immediately.
