Human 2019 vintage, 45% Polished Yamada-Nishiki Junmai Dai-Ginjo from Kamoshibito Kuheiji, Banjou Sake Brewery. 🍶

Interesting Junmai Daiginjo from Nagoya City, Aichi Prefecture. Lots of acidity pairing with the umami and sweet notes. I must admit I was not overly keen first sip but it did grow on me! 😊

A Sake from our Sake 101 class last week. Keigetsu Gin no Yume, Junmai Dai-Ginjo 40. Brewed with the Gin no Yume Sake rice polished to 40% everything you could want from a Dai-Ginjo! :)
