Part of the art of roasting a bean is not only how it get's heated (temperature, duration, heat profile), but also the rate at which the beans cool down once removed from the roaster. After timing a roast with precision, you want to ensure the beans don't continue to cook once removed from the heat. Solution? Agitation with air and the additional support of an ice bath.
