The sweetness of Canadian peony shrimp is enhanced in a coating of mountain pepper yuzu sauce, touching the tip of the tongue. The freshness of the shrimp itself and its tenderness mingled with the grapefruit jelly and green apple. The layers of flavor that the chicken skin on top of it brought with it the fat that made the dish unthin and smooth.

加拿大牡丹蝦的甜味在山椒柚子醬的包裹中輕柔地擴散,在舌尖撫觸。蝦肉本身突出的鮮和它的柔嫩與葡萄柚凍和青蘋果交匯,大顆鮭魚子在齒間崩開,和層層相疊的味道放於其上的雞皮帶來油脂的浸潤使這道菜吃起來沒有單薄感,清口爽滑。

After the juicy, creamy Australian Wagyu M7 beef sirloin, a refreshing waxberry sorbet brings a balanced acidity that flows across the palate to finish off the main course. The menu is rounded off with a special goji berry ice cream paired with a soft sponge cake exuding aroma of sweet potato.

在汁水飽滿,有著油脂奶香的M7西冷謝幕後,被呈上的是清口楊梅雪芭,酸味於嘴中蔓延,有著主菜過後的爽口感。最後的甜品搭配了特別的枸杞冰淇淋,綿軟的蛋糕充斥紅薯的香甜,是將整套菜單收尾的不二之選。

Duck breast is placed in duck broth to cut off rawness, giving it a crisp and tender texture that echoes the sour turnip and the velvety duck pudding. Cod fish and clams are sharp in freshness and yet mild in flavour, and are perfectly complemented by the saffron clam sauce.

酸蘿蔔老鴨湯浸潤味蕾,將鴨胸肉放入盤中後被鴨湯燙熟,食客能在其和酸蘿蔔送入口中後品到脆嫩呼應的口感,微抿鴨豆花,湯汁也從中流動出來。銀鱈魚與蛤蜊的鮮味直白也溫和,搭配蛤蜊汁調配的醬汁,絲絲入扣。

The marinated yellow tail fish is tender and smooth with crunchy green apple and fresh horseradish, brightened by dill sauce. Plump, chewy Japanese scallop is served with a side made with British bacon sauce, bacon crisp, coffee and porcini mushrooms, jazzed up by scallion puree and shallot oil.

醃漬黃獅魚咀嚼起來嫩而爽滑,搭配青蘋果的脆甜與辣根蒔蘿醬汁的清新,清口解膩。日本扇貝佐以熏肉,咖啡和牛肝菌製作而成的配菜,京蔥泥和綠蔥油吊起香味,整道菜鮮甜也帶有扇貝在齒間展現的那一點韌性。

A whole swimming crab is cooked and deshelled before being placed on the plate and drizzled with vanilla crab sauce. The savoury caviar on top is harmonised with a hint of sweetness of the crab meat. For the main course, slow-roasted Australian Wagyu beef sirloin M5 or grilled sea bass at your choice brings the menu to a satisfying pinnacle, creating distinct French flavours that belongs only to Proust.

正值旺季的梭子蟹陳於盤中,將整只梭子蟹肉煮熟剝出澆以香草蟹汁,上方魚子醬的鹹鮮被蟹肉淡淡的甜味調和,相輔相成。主菜部分的M5西冷和烤海鱸魚將菜單引向尾聲,醬汁包裹鮮嫩肉質,在食客口中綿延出獨屬於普魯斯特的法餐韻味。

The Arctic sweet shrimp tartar is balanced by grapefruit jelly and kiwi fruit, with just the right amount of sweetness and acidity to awaken the taste buds. The purple butter clams have always been popular with diners for its tender meat, and the combination of asparagus, green apple and clam juice is a delightful gustatory novelty.

Food is, at times, the way in which people interpret life in an artistic form. A good menu can be the prelude to a masterpiece. Art doesn't have to be made up of unfathomable colours and images, but the flow of consciousness provoked by taste buds can be the trigger for a journey into the subtleties of ordinary life.
