Our label changes each year because so does the oil.

Each harvest tells its own story—contoured by rain, sun, soil, and season. No two years are ever the same, and neither is the oil. We don’t chase uniformity; we honour nature’s singular expression. What you taste is a specific moment in time, crafted exclusively by the grove and the year that shaped it.

All extra virgin olive oils are not created equal.

Using defective readily available oils on an oyster, gelato, or even as a morning shot will never create magic—these oils taste bad and are often rancid or stale, having travelled long distances slowly, to sit in warehouses.

True extra virgins are fresh, alive and the purest expression of the season in which they were harvested. They are not just an ingredient but an experience, enhancing the flavour and nutritional density of everything they touch.
