This means certified “00” flour for neopolitan-style pizzas; high-extraction red spring wheat for sourdough breads or blending flours such as locally-milled all-purpose and semolina flours for pasta.

Mortadella, Fior di latte, shallot, crushed pistachio and ricotta. Might add this to the menu - would also be great with some red 🌶️ on top for a little heat. Baking without the rain would also be pretty nice.

My father opened this flour mill in Bridgetown, Barbados in 1977. Once owned by Maple Leaf Mills, it is now run by ADM (Arthur Daniels Midland). Hard to believe it’s closing in on 50 years! - a little blast from your past.

These pan loaves have easily become the ‘go-to’ choice for everyday bread. Great for sandwiches, toast etc.. ’s tips in his new book, Evolutions in Bread call for adding levain (more flavour and great way to use discard) and cold proofing overnight - guarantee a delicious loaf.

This weeks pizza orders - if you’re interested in pizza this coming Friday, please reserve by sending me a note by noon tomorrow. Margherita pizzas are made with Italian 00 flour and pepperoni, organic Canadian hard flour. Both have a small amount of house milled wheat for added flavour.
