Announcement- as of February 28th 2023 we will be closing our website, we will however still operate our wholesale program so please support your local coffee shops and cafes. We appreciate your understanding as we make this change and wish everyone a great long weekend! ☺️

This is our single farm coffee from producer Almaz Sahille. These beans deliver a sweet cup with jammy notes of peach tea, fresh grapes, and a delightful hint of pineapple as the coffee cools🍍

New coffee launch 🚀

Almaz Sahille - Ethiopia, naturally processed
⠀⠀⠀⠀⠀⠀⠀⠀⠀
This is another addition to our single farm project bringing even more traceability to Align 📍
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Almaz has gained a strong reputation as a model farmer within her community, she and her 11 children (all of which are in school) operate her farm in the woreda of Konga, a region in Yirgacheffe known for their excellent coffees ☕️
⠀⠀⠀⠀⠀⠀⠀⠀⠀
As for the coffee itself - these beans deliver a dense and sweet cup with notes of peach tea, fresh grapes and pineapple coming through as it cools. This coffee has everything we look for in a naturally processed Ethiopian, layered and complex with a fruit forward profile 🍍

One of the keys to great espresso is getting your grind dialled in - meaning you have the correct grind size, even distribution and level tamping.

Lets have a talk about specialty coffee & more specifically why we only source specialty ☕️

All coffee is graded on a scale of 1-100. To put it simply, specialty coffee is any coffee graded 80+.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
We believe that sourcing in this way not only has a positive impact in your cup but also the farmers producing the coffee. Coffee pricing is correlated to the grade it receives - therefore by being paid above commodity pricing (fair-trade being our minimum standard) farmers and producers are empowered to pay their workers fair wages and implement better farming practices which often involve lest waste and more sustainability within the industry. 🌿

One question we get asked fairly frequently is – what is your favorite origin? 🤔
⠀⠀⠀⠀⠀⠀⠀⠀⠀
For me (Zach) I’ve always had a soft spot for Ethiopian coffees. A naturally processed Ethiopian is what got me into specialty coffee in the first place and I can’t help but feel a little nostalgic whenever I sit down and sip away on one. Honestly when sourcing I have to keep myself in check – trying to keep a variety of origins and not just a bunch of bright and fruity Ethiopian coffees 😅

The funny thing is that as of right now we do not currently have an Ethiopian offering but things could soon change… just saying – keep your eyes peeled 👀

Hello everyone 👋 it’s been a little while since we’ve introduced ourselves & shared a bit about our coffee story - we’re Caitlin + Zach - the people behind Align Coffee☕️
⠀⠀⠀⠀⠀⠀⠀⠀⠀
I (Zach) am the one behind the roasting & souring of the coffees we offer. I am also the one that’s responding to you on here & in emails. My journey into specialty coffee is not an uncommon one - I wasn’t a huge coffee drinker to begin with, I never really enjoyed the bitterness I would find in a lot of coffees. That was until I had my first sip of a natural Ethiopian coffee, I had never experienced anything like it before - the way I could not only taste but smell the slightest bit of blueberries in the cup blew me away 🤯. By experiencing how different and flavourful it was I wandered down the proverbial rabbit hole of specialty coffee and realized the difference it had not only in your cup but the equity it provides the farmers producing the coffee. (If this is something you’re interested in learning about shoot me a message and I am happy to share the knowledge I have or even recommend some great reading material!)

Caitlin is the other half of Align - being a CPA she is more of the business mind behind the scenes along with handling most of the design elements and photography you will see with Align. Caitlins knowledge of business strategy along with her interest in specialty coffee makes her a driving force in why I (Zach) am able to keep on track and produce coffees that we think you’ll find interesting and maybe change the way you think about your cup of coffee 🤔
