The response to our last post has honestly been unbelievable.
So many of you liked it, commented, encouraged us and said such kind things about our little food truck. We really didn’t know how to thank everyone.
And all that encouragement has given us the courage to finally talk about something we’ve been quietly working on for a while.
Since we closed for the season last year, we’ve been thinking about Samosa Man frozen food.
The idea was pretty simple: could we make really good food that you could keep in your freezer, heat whenever you wanted it, and still have an experience that we would be proud to put the Samosa Man name on?
But we could never quite take that first step.
That doesn’t mean we haven’t been experimenting, though.
Over the last year, we’ve tried quite a few recipes. We’ve frozen them, reheated them in different ways, checked how the texture changes, how the flavour holds up, how easy they are to prepare and, most importantly, whether they’re still something we’d be excited to eat ourselves after coming out of the freezer.
And out of all that experimenting, a few real favourites have emerged.
Our Kerala-style Beef Curry is one. Coconut Shrimp is another. Our Palak Paneer has become another favourite.
And there are a few more that we’re probably not ready to reveal just yet.
These aren’t recipes we just cooked once and thought, “Yeah, that’s pretty good.”
We’ve made them, frozen them, reheated them and eaten them over and over again.
And we’ve reached a point where we feel really confident about the whole experience, not just how they taste when they’re freshly cooked, but how they taste when you pull one out of your freezer weeks later and make dinner.
That’s really what excites us about this idea.
Something delicious that can calmly sit in your freezer, asking absolutely nothing from you…
…until that evening when you’re tired, don’t want to cook, open the freezer and remember it’s there.
Heat it up, get some rice or naan ready, sit down and hopefully it puts a little smile on your face.
That’s what we want these meals to be.
And we realized something else while working on them.
We don’t really want Samosa Man to grow into a restaurant.
And we definitely don’t want to have a giant menu trying to make every Indian dish imaginable.
We’d rather become a little company that’s slightly obsessed with making really, really good Indian freezer meals.
Maybe that’s only 4 dishes.
Maybe eventually it’s 8.
But every single one should have a reason to be there. Something we have worked on, tested again and again, and can genuinely say:
“Yep. We’re proud of this one.”
Food is a tough business, and we’ve been nervous about taking this step for a long time.
But after seeing the incredible response from all of you on our last post, we thought…
Maybe instead of wondering whether anyone would want this, we should just ask you.
