AAA Alberta beef striploin, vacuum infused with sesame and ginger, seared in red hot cast iron and sliced thin.
TOFU
Agedashi style tofu, dusted in secret spices and fried crispy.
Both served in a pool of sour spicy soy sauce and topped with house made, quick pickled kimchi and compressed melon
RAMEN
STEELHEAD RAMEN Chasu style Lois Lake Steelhead rolled and baked in a seaweed and maple soy glaze, local farm fresh soft boiled egg, ponzu tare, and rich dashi style whitefish broth. Crispy fennel tempura, Shiitake mushroom, pea shoots, and cilantro
CLASSIC TONKOTSU Chasu style pork belly, slow cooked and glazed in apple, maple and soy, rich and creamy tonkotsu broth, soft boiled egg, oyster mushroom, pork floss, nori and fresh scallion
VEGGIE RAMEN Crispy delicata squash, bok choy, sweet and salty bean and tempeh cake, spicy coconut ginger miso

MATCHA KEY LIME PIE Matcha, lime and sweetened condensed milk, graham cracker crust.
