I like to use up ingredients and clean up the fridge/pantry sometimes. Tonight I made a mishmash and it turned out great.
Eggplant breaded in leftover blitzed Dorito nacho chips. Fried in peanut oil and plated on toasted ciabatta. Marinara on bottom, smoked Vailo 🌱 provolone melted cheese 🧀. I found sun-dried tomatoes, scotch bonnets and grape tomatoes so…I turned it into a salsa 😚 Some frozen fries that weren’t frozen burnt yet took this to the next level…or was it the optional braised red cabbage ;) This was a bit of a stretch but it was sooo good.

I’ve got a big bag of lump briquettes and a beautiful Weber BBQ. Any suggestions on what to make? Stone ciabatta? Cheesecake? Rosemary smoked provolone? Or, a smoked provolone cheesecake with a ciabatta bottom…? Help, I clearly need a suggestion.
