Now that it’s summer and my kids are home every day, I try to prep a selection of snacks for them and any friends that might be over!
The Spice Age is our go to for any dips and dressings. Fantastic ingredients, locally made!
BANANA MUFFINS:
1.5 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1.5 cups mashed bananas (about 3 large ripe bananas)
6 Tablespoons unsalted butter, melted
2/3 cup packed light or dark brown suga
1 large egg
1 teaspoon vanilla extract
2 Tablespoons milk
optional: 1 cup (ish) choc chips
Mix bananas, sugar, butter, milk, vanilla, and egg. Add dry ingredients. Scoop into muffin liners and bake at 425 for 5 minutes, then drop the temp to 350 and bake an additional 15-20 minutes.
ITALIAN HERB & CHEESE BUNS
1.5 cups water, lukewarm
2 Tablespoons active dry or Instant yeast
3.5 teaspoons sugar
1.5 teaspoons fine salt
3.5 teaspoons vegetable oil
4 cups flour, levelled
Add water, sugar, yeast to your mixer with dough hook. Mix until combined and let stand for 5 min until fluffy. Then add vegetable oil, and salt. Mix.
Add flour, one cup at a time. Once all added, mix for 4-5 minutes. Dough may be sticky - it’s ok! Cover with a towel for 15 min.
Divide dough into four equal pieces, roll each piece into a ball. Cover and let sit for 15 min
Shape each ball into a rectangle by pinching the seam underneath. Then, roll the dough with your palms into a log shape about 10-12 inches long. Place on a parchment lined baking sheet, brush with water and cover for 30 min.
Preheat oven to 375.
Brush tops with water again, and add a mixture of Parmesan, Italian seasoning, salt and pepper.
Bake 18-22 min. Enjoy!!
