I’m going to try something a bit different on Tuesdays. I will be using them as my prep day for the week. I will still have the store open for buying gifts, muffins and coffee/tea only. And you may place a pre-order for other items you would like for pickup on Tuesdays, but I will not keep the front stocked up like other days. This will allow me to build up a stock of pie doughs and other batters and doughs in my fridge and freezer so I can run smoother on the other days, but also allow me to have my 2 day “weekend” off on Sundays and Mondays to recoup from the rest of the week. It is also generally the slowest day of the week business wise. Pre-orders for Tuesday must be in by Monday 8pm.

Bad news for me folks but good news for you! On a whim I got my doc to test me for celiac after starting to show side effects of eating gluten after not eating gluten for a few weeks. Guess who tested positive and is your new celiac friend?? Glad I’m a seasoned gluten free baker already, and you will be too because now I’m determined to master more bread products! I’m also appalled at the lack of chocolate bars, but thank goodness my Reese PB cups and Reese’s Pieces are still ok along with peanut m&ms! And please if I’m wrong don’t tell me! But do tell me what are your favourite gluten free chocolate bars? My favourite thing to do is mix the mini cups, Reese’s pieces and peanut m&ms in a bag all together! That’s what I call a party mix!

So on the bread note, I’ve got dinner rolls and Hamburger buns now. I’m thinking of trying English Muffins and tortillas next. Croissants and puff pastry still has to wait. Baby steps!

As many of you know, I was able to go see my Mama for a week and a bit. My son Liam and husband Derek went with me. We (Derek) drove straight through only stopping for a few hrs to sleep in the car on a 25 hr trip. We got home Sunday after stopping 2 days along the way to stay with my in-laws. A day of rest, and 2 slow days of having the bakery open again, only to find out last night mom is back in the hospital with more complications and I’m wishing I had just stayed. The procedure she had done before in Sudbury stopped fluid from pouring into her lungs, but now it’s amassing in the rest of her body. She is on diuretics to try and remove some fluid again as her breathing was getting worse again. She had been on 6 L oxygen per hour at home, they raised it to 10 at the hospital to help her breathing, I think it’s lowered back to 6 again now. She also has a blood clot on her liver now. When I left her a week ago, the plan was to go back in December assuming she was stable until then. I thought I would have time to run the bakery and get back on track financially again. Maybe fundraise some more before I had to shut down and leave again. And now I’m waiting to find out if I need to fly back out this weekend. So please share the heck out of this fundraiser as I’m terrified of not being able to pay bills, but more terrified that I will regret not going back to be with her. I was supposed to have more time with her! And now I’m back in Nova Scotia wishing I had just stayed by her side. I have enough air miles to cover most of my flight back, so I’m not worried about getting there. Thank you to everyone that has donated so far, it helped pay the bills for me to close the bakery for 2 weeks while we were gone. It was such a relief to come home and know we were starting fresh at 0, and not bank account in the red.

Dinner roll test batch # 3 using pizza bun dough, I don’t like this flavour for my rolls, not sweet enough but could add more sugar, and although it’s more bread like, it’s a dense bread. Also not visually appealing, doesn’t brown nicely. I could see using this dough to make ciabatta buns if I tweak the flavour a bit.

All in all, a slow business day was not wasted! So the winner in my mind after tasting all 3 rolls hot and cooled is the cinnamon bun dough which stayed fluffy and didn’t turn dense and had the best flavour!!
