Happy Saturday everyone!
I want to touch on something personal that I don't speak publicly on too often.
I was diagnosed with celiac last year, meaning that when I eat gluten (wheat, barely etc), my body releases antibodies that attack my small intestine, and cause havoc all over my body.
The first picture was from July 2024, testing the levels of these antibodies. My doctor was doing a spray and pray of testing to see what was causing the rapid degradation of my liver. The results were shocking and literally off the charts. It led to a biopsy last year, and my official diagnosis.
The second picture is my most recent result, almost exactly two years later. I have a strict gluten-free diet and lifestyle. Through awareness and hard work, I'm quite literally "off the charts" on the other end of the scale.
My liver has returned to normal health levels. My intense inflammation and bloating has significantly been reduced. I no longer get brutal headaches like I used to. I still have a lot of long term damage to my body that has been caused by celiac (like diabetes, energy recovery, etc), but I am making significant progress. 35 years of untreated damage is a tough one to reverse, but I am doing it.
This is why I am so adamant with our restaurants having gluten free dining. It's not something I openly advertise, but 90% of our menu is gluten free. And when requested, we treat gluten free orders with incredible respect. We have made a bit of a name for ourselves in the GF community, and it grows every day.
I eat my own food, and I wanted a restaurant for others who are similarly affected to eat as well. Not just for them, but for the families of those with celiac/allergies/gluten intolerance. It's a team effort in many cases, and often very difficult to not only coordinate, but to enjoy as well.
Anyways, I just wanted to share this progress and achievement, and hopefully give our GF customers a bit of peace of mind if you choose to dine with us.
