Butter tarts are one of the few desserts considered truly Canadian, and the first written recipe is said to have been printed in 1900 in Barrie, Ontario. Flaky pastry holds a rich, gooey brown sugar filling, sometimes with raisins and sometimes without. Whether raisins belong is still a passionate national debate, and nearly every family has a firm opinion.
