PSA it seems a variety of our chicken wingz have been causing some concern with people. Thank you to those who have shared pictures with us directly and not posted online to scare people away. Our chicken is brought in fresh, battered, then cooked to 74°. Stored in our fridge, then served per order and cooked again to 74° so if you see red in your chicken, it is not due to undercooked. It is in fact due to myoglobin. I too had concerned when I saw red in my chicken near the bone many many years , I ended up trying to cook it out of it and even after an hour of cooking an item that should only take 10 minutes the red remained. So although it is concerning to see the red, it is in fact, not undercooked chicken. The picture has a little snippet of what myoglobin is and what causes it. It is definitely something that people should be more knowledgeable about. If you have any concerns, please feel free to message us. We are in talks with our supplier as to why this has become more common as we haven’t had this issue until recently.
