Locally sourced white asparagus from Lavrijsen is paired with lemon verbena, sea lavender and aged mimolette, creating a delicate balance of freshness, minerality and depth.

As the asparagus season draws to a close, this is one of the final opportunities to experience this beloved ingredient at its peak. Soon, a new menu will take its place, inspired by the next chapter of the season.

Inspired by the North Sea and the Oosterschelde, Chef Arne Beirinckx creates refined dishes that tell a story. By working closely with local producers around Ordingen and embracing seasonality wherever possible, his cuisine brings together pure flavours, subtle herbs, citrus and thoughtfully sourced seafood with deep respect for marine biodiversity. Featured dish: wild sea bass, cockle, lovage and basil - part of the 6-course Aurum menu.
