This dish brings together Italian and Japanese influences, featuring tuna - a key ingredient in both cuisines
For centuries, tuna has been an essential part of Sicilian cuisine, especially in Favignana, where tuna fishing is a big part of the local culture. It used to be caught with the ancient and sustainable “tonnare” method.
In this dish, the tuna is marinated in traditional Japanese style and cooked using the tataki method that perfectly brings out the natural flavors of the fish.

Every dish at CIAO has a story, and this week’s lunch special - beetroot, ricotta, and sesame - is no exception.

Head Chef Leonardo found inspiration where ingredients from the earth take centre stage.

Earthy beetroot is paired with creamy ricotta - once known as the ‘poor man’s cheese.’ Traditionally made by re-boiling buttermilk, a leftover byproduct of cheese production, ricotta transforms what was once considered waste into something extraordinary.

The result: a dish that’s simple yet refined -a celebration of humble ingredients and their incredible potential.
