Sometimes, my quest 🔎 to save the ingredients that have spent an eternity in my pantry gives birth to the most wonderful creations 🪄. This Carrot Cake 🥕 is the easiest and absolute most delicious you will ever try 🤤. It is adapted as a traybake, but can be made into a layered cake 🎂 (by doubling the quantities for the cake batter) and making a whole lot more frosting (my guess is 3 times more). Sometimes, my quest 🔎 to save the ingredients that have spent an eternity in my pantry gives birth to the most wonderful creations 🪄. There was a sad block of tofu in my fridge 🧀, so I decided to try my luck at making Vegan Spring Rolls 🥬, especially because I love ordering them from Asian restaurants. These are quite quick to make, once you get over the painstaking process of cutting everything thinly 🔪, which I have zero patience to do. Use a mandolin slicer if you are any bit like myself and want to make your life easy. The dipping sauce 🥜 is as easy as mixing all of the ingredients in a bowl 🍜 (which is why no explicit recipe is provided). Today’s recipe is dedicated to my beautiful .m.surdu and her love for Masala Chai 🍵. Each time I make this, I feel the hug 🤗 of every single God of Ayurveda. I am instantly transported to a space of cosiness 🛋️ and comfort, where my spirit is replenished 🔋 with the flavour of all the spices that make this tea an absolute delight 🤤. Since the start of the year 📆, not much has been happening in my kitchen 🍽️. That, until asked me to make her birthday cake 🎂. Thus, this Salted Caramel Speculoos Cheesecake (inspired from my Upside Down Apple Cake) was born 🎁.
