The best Massaman Curry isn’t made quickly. It’s built in layers.

We spend time perfecting the balance right, pairing the heavy, creamy coconut with the light crunch of fried shallots and toasted peanuts. It takes hours of simmering to get this much flavor into a single bowl, but we think it’s the only way to do the recipe justice.
