Kacchi Biryani–

A royal delicacy from the kitchens of Mughal heritage, Kacchi Biryani is an aromatic and flavorful rice dish made with tender, marinated meat (typically mutton or chicken), long-grain basmati rice, and a rich blend of traditional spices. Unlike regular biryani, the meat in Kacchi Biryani is marinated overnight and cooked raw—layered with rice and slow-cooked (“dum style”) to perfection, allowing the flavors to infuse deeply into every grain.

Ingredients
For the Marinade:

1 lb (450 g) chicken, cut into pieces
1 cup yogurt
2 tsp turmeric powder
1 tsp chili powder
1 tsp garam masala
Salt to taste
For the Curry:

2 tbsp oil (vegetable or coconut)
1 large onion, finely chopped
2-3 garlic cloves, minced
1 inch ginger, minced
1-2 green chilies, slit (optional)
1 tsp cumin seeds
1 tsp coriander powder
Fresh cilantro for garnish
Instructions
Marinated the Chicken:

In a bowl, mix the chicken with yogurt, turmeric, chili powder, garam masala, and salt. Covered and marinated for at least 30 minutes
Cooked the Curry:

Heat oil in a large pot over medium heat. Add cumin seeds and let them splutter.
Add chopped onions and sauté until golden brown.
Stir in minced garlic and ginger; cook for 1-2 minutes until fragrant.
Add chopped green chilies.
Mix in coriander powder and salt; stir well.
Added Chicken:

Added the marinated chicken (with the marinade) to the pot. Cook for 5-7 minutes until the chicken is browned.
Poured in about 1 cup of water (adjust for desired consistency). Bring to a boil, then reduce the heat, cover, and simmer for 20-25 minutes until the chicken is cooked through.
