These three words are my benchmarks for preparing and eating whatever I choose. I’ve been a lover of food and maker of meals for as long as I can remember. From my childhood home kitchen helping by peeling potatoes and topping beans, to the professional kitchens throughout my career, food, eating well, eating different and eating with joy has been second nature. Through conversations wi

th friends, clients and co-workers I realised that not everyone feels the same. Busy schedules, overwhelm at meal planning, uncertainty at the stove, food intolerance's or fear of new flavours can all interfere with the joy of preparing and eating luscious food. But what if this could all change with ease? Cooking in your kitchen allows you to relax, enjoy and create. I get it, letting someone into you house to cook with you when you are learning from scratch can be intimidating. But just think - No scary industrial equipment, no utensils you don’t have at home to make the recipes yourself and no stress to get it “right”. I’m there with you every step, sharing my knowledge, teaching you my skills and inviting you to discover the joy of cooking you yourself can have and create in your own kitchen. Cooking has always been second nature to me and I love to share the joy and happiness with anyone and everyone. What if we could leave the stress and hassle at the door and create wonderful delicious meals that make your mouth and body sing? I love to create meals that are delicious, joyous and a delight to eat. These can be from the simplest salad to the most complicated desserts. Most of all I love to create them in my own kitchen and share them with others. This is how In My Own Kitchen was born. I have cooked here in Australia and around the world and brought home recipes, ideas and inspirations that I can’t wait to share with you all in the comfort of your kitchen. All you need to do is invite me into your kitchen and I'll do the rest.

Make dinner with client Archer and I. This veggie-packed, family-friendly tikka masala was the perfect way for Archer to level up his chopping skills and practise sequencing a recipe start to finish

Baking is great for measuring, but curries like this one are brilliant for something different - measuring spoons, building layered flavour, and learning why we add vegetables for texture as well as taste

Wondering what your child could actually do in this recipe? Here's a rough guide:

3–4yrs: measuring spices, stirring the paste 5–6yrs: measuring independently, mixing the paste
7–8yrs: knife skills with the bridge and claw method, following the method
9+yrs: managing the whole sequence — cooking, timing, checking it's done

Chicken Tikka Masala

Ingredients:

1 small onion
1 chicken breast
½ red capsicum
200g chopped tomatoes
1 tbsp vegetable oil
1 tsp cumin
1 tsp garam masala
½ tsp turmeric
½ tsp chilli powder
1 tsp lemon juice
1 crushed garlic clove
1 tbsp tomato paste
1 tbsp mango chutney
2 tbsp yoghurt

Method:
1. Dice the onion and capsicum
2. Mix the spices, garlic and lemon juice into a curry paste
3. Dice the chicken into bite-sized chunks
4. Gently cook the onion in oil until soft
5. Add the paste and cook for 2 mins
6. Add the chicken, capsicum, tomatoes, tomato paste and 100ml water — bring to the boil
7. Simmer for approx. 10 mins until chicken is cooked through
8. Stir in the yoghurt and mango chutney
9. Serve hot with rice

Sprinkles, icing, and a whole lot of fun at this birthday party

Need a quick dish to impress guests?

Or perhaps you're looking for something a little different to the usual cheese and crackers?

Or maybe you've just got leftover ricotta sitting in the fridge that needs using up

This super simple baked ricotta ticks all those boxes. I say "recipe", but it was really one of those "a bit of this and a bit of that" moments!

Here's what I used:

200–300g ricotta
A sprinkle of dried thyme and rosemary
A splash of cream to lighten it up
A drizzle of olive oil, plus salt and pepper

Mix everything together, spoon into a lined cake tin and bake at 180°C for 20–30 minutes, or until golden and set

Let it cool to room temperature, then serve with your favourite seedy crackers

Simple, delicious and guaranteed to disappear quickly. A winner!

Having a pizza party when you're 9 just makes sense. 🍕🎉

Food is something to celebrate. It brings us together, sparks conversation, and creates joy as we experiment, create and try something new

These girls had so much fun rolling out their own dough and topping their mini pizzas just the way they wanted. We even made a few fun shapes, with a little teddy bear becoming the star of the day!

Birthday celebrations don't have to be stressful or over-the-top to be memorable. Sometimes the most meaningful moments come from creating, laughing, and sharing good food together

Client Spotlight - Meet Renee!!

Renee came to me looking with a few goals:

- Be more confident and comfortable cooking basic dishes
- Learn how to incorporate more vegetables in dishes
- Learn how to cook from a pantry and use what you have on hand

Each week I think it's fair to say that Renee and I not only hit those goals but smash them

Dish by dish we have built her confidence in chopping vegetables, following recipes and measuring out the ingredients for baking and trying new flavours

Each time I push Renee a little out of her comfort zone I joke about if I have ever let her down and she laughingly replies well there was that one time...and look there may have been one or two recipes that didn't quite live up to the hype but overall we have built quite a large repertoire of dishes Renee now enjoys and can prepare with ease

The thing about learning the basics is that they aren't glamourous show stoppers but they are the skills and dishes that have you confidently making meals you genuinely feel proud of and can't wait to eat

Client Spotlight: Meet Kat aka katcooksofficial

Kat has been working with me for over 3 years and we have tackled so many goals in that time

We started off with building her cooking skills: taking it back to basics of chopping, working on hot stoves and getting timing right

We then layered in more complex steps and multi dish menus as her skills and confidence grew

Once she graduated school and needed to balance working life and meal planning, we started incorporating quick meal ideas, utilising pantry staples and meal prep that takes you through the week

It has been the most wonderful privilege seeing how Kat has grown in both her skills in the kitchen and confidence as a young adult levelling up her independence and life skills

She loves to create delicious recipes and I always look forward to seeing what we are exploring together!

It seems that Thursday's home with my daughter are for baking and making biscuits ❤️

We didnt have time before running errands and collecting my son from school so she reminded me once home that I said we would do some baking

So sprinkle cookies were made!

Cooking with kids is chaos even for me. But these pocket memories and life skills are worth the messy bench I promise 🍪

Cooking from my heritage and memories month

When I was growing up, these were called Italian Lemon Biscuits in the cookbook

They came from an old Women's Weekly biscuit cookbook and always seemed to appear for special afternoon teas

When I went looking for the recipe recently, I discovered Women's Weekly now calls them Christmas Wreaths. Same recipe, different name!

It made me wonder how many family recipes have their own names, stories and traditions that don't quite match what's written in updated versions of the recipe they have always loved

A dish that everyone calls by one name, only to discover later that the rest of the world calls it something completely different? Or something that has been passed down but has been reimagined as something new?

Tiramisu - one of those desserts that doesn’t look spectacular, but has you in love from the first bite

This month I’m cooking dishes from my childhood memories and heritage

Don’t be fooled by its simplicity - it is from the Treviso region of Italy and is a masterclass humble ingredients doing some very heavy lifting

Tiramisu first became part of my story on a holiday in Italy in the 90s. My zia showed my mum how to make it properly, and from then on it became one of those desserts that was part of our story

I still remember sneaking bites from the tray in the fridge having fallen in love with this dessert

Recipes sometime add whipped cream, and some versions include alcohol. Cream? I'll pass. Alcohol? That's entirely up to you.

This version was made during a lesson with a client who had only ever tried supermarket tiramisu and wanted to learn what the real thing was supposed to taste like and once you make it yourself you'll understand how good it really is
Ingredients

Recipe
4 eggs separated
100g caster sugar
500g mascarpone
250ml strong espresso, cooled
200g savoiardi (ladyfinger biscuits)
Cocoa powder, for dusting
Dark chocolate, finely grated (optional)

Method

Place the egg yolks and sugar in a mixing bowl and whip at a high speed until light and creamy - you shouldn't be able to feel sugar between your fingers when you rub some mixture between them

Whip the eggs whites in a separate bowl until soft peaks form

Fold in the mascapone to the egg mixture and fold in the whites after

Quickly dip each savoiardo into the cooled coffee and arrange in a single layer in your serving dish

Spread over half the mascarpone mixture, then repeat with another layer of dipped biscuits and then the remaining cream
Cover and refrigerate for at least 4 hours, preferably overnight.

Dust generously with cocoa powder before serving
