BAKE WITH BAKER BREN 👨🍳🍋🥥
You love it in store, now you can bake it at home! 🙌 Our Original Lemon Coconut Slice — soft, coconutty and finished with a sweet, zingy lemon icing. 🍋
For the slice:
🥣 140g self-raising flour
🥥 90g desiccated coconut
🤍 150g white sugar
🧈 125g margarine, melted
🥛 125g milk
🥚 2 large eggs
✨ 5g (1 tsp) vanilla extract
🧂 1g salt
Mix the flour, coconut, sugar and salt together. Whisk the melted margarine, milk, eggs and vanilla, then fold into the dry ingredients until just combined.
Spread into a lined 27.5 × 17.5cm slice tin and bake at 180°C conventional / 160°C fan-forced for 25–30 minutes until lightly golden.
For the lemon icing:
🍚 160g icing sugar
🍋 Fresh lemon juice, as needed
Mix the icing sugar with enough lemon juice to make a smooth, spreadable icing. Spread over the slice while it’s still slightly warm, allow to cool completely, then slice and enjoy!
