A Spectacular Friday Night Lua Sydney featuring live Tasmanian King Crab and Southern Rock Lobster from the tanks of

Lua’s lovely regular guest requested the best Live Seafood for a magical Birthday Dinner.

So we sourced the greatest Giant King Crab & Red Rock Lobster, freshly caught from the pristine waters of Tasmania. We prepared & cooked them several different ways & served it as their middle course.

Such a delicious & memorable Birthday Celebration…

Anatomy of a Dish ~ Southern Rock lobster dumpling.

Live lobsters from Tasmania arrive to Quay, sourced by , before being poached in clarified butter and combined with a lobster and scallop mousse, to create the plump dumpling. Placed atop a brown butter emulsion, the dish is finished with an umami consommé made with squid, scallops, shiitake, vongole, artisanal fish sauce and vinegar laver. The final element is golden tapioca, poured tableside.
