Prepared using the ‘all’onda’ method, risotto is one of Alessandro Pavoni’s most celebrated creations.

A true expression of land and sea, Abrolhos Island scallops from Western Australia meet a saffron infused chicken and clam stock risotto, made with aged Carnaroli rice. Butter basted scallops are finished with a delicate roe emulsion, balancing richness, depth and coastal freshness.

Ormeggio’s newest signature has arrived. first perfected this iconic “alla Rossini” at the three Michelin star Gualtiero Marchesi, where it became one of his all time favourites, bringing together luxurious flavours and refined technique.

Now, it’s reimagined at Ormeggio with dry aged Tajima Wagyu tenderloin, polenta brioche, wilted spinach, foie gras and truffle jus, a reflection of our new chapter and the balance of land and sea.

A new chapter begins at Ormeggio at The Spit.

After 17 years, we excited to announce, we’re redefining our Italian fine dining experience with a refreshed menu that goes beyond the sea -introducing premium meat dishes alongside our signature seafood. A true balance of land and sea, all while staying rooted in our Italian heritage.

We are also introducing our new $98 Primi & Secondi menu, designed for you to curate your perfect dining experience, whatever the occasion. Plus, our Terrazza Bar is finally open and bookable for drinks and snacks.
