Uma, our last happy week: come and say good bye.

Uma will be closing its doors at Darling Square, on Saturday 27th at 9pm.

We’re moving things on-line for a while, where you’ll still be able to get some of our lovely meals, fresh-frozen, here’s the link: foodst.com.au/pages/parliament-on-king-partnership

So why is this happening?

Well, Uma was only possible because the lovely people at Lendlease had kindly and generously provided the space on a ‘pop up’ basis, their way of supporting the work we do with the refugee and asylum seeker community – however, that ‘pop up’ lease has now run its course.

Lendlease went above and beyond to keep us there, even during the darkest days of the pandemic lock down, so thank you Jacqui Stanton and Lendlease, you are fabulous and we’re grateful.

Amazingly, and against the odds, Uma succeeded; so thank you to all that came and supported the work, and shared the food – together we all made something really special happen.

So, what’s next?

Well, aside from going on line, and providing Sally’s food at Parliament on King, we’re looking for a new home for Uma - we’ll be back, if you have any ideas for a new home, let us know, we’re open to ideas and collaborations.

The secret of the roses….

Here’s one of Sally’s cooking tips: sort of a secret, for her egg curry, you first boil them gently, then a quick shallow fry before adding to the curry base. So tomorrow’s special, yes egg curry- and a small batch of her famous barramundi curry too, but I’d get in early for that.

We’re on this list, twice, once for Parliament on King, and also for Uma. Thank you Welcome Merchant and thank you Urban List, very honoured to be listed with these other wonderful businesses.

At the moment, a little publicity helps; as you can imagine, it’s pretty brutal out there for hospitality, and a challenging time for the asylum seekers and refugees with which we work each day. So it may be a nice time to eat your way through this list.

If you’re interested, our little café (Parliement on King) is back open on weekends, our catering is back seven days a week, and Uma is open for lunch Wednesday to Sunday.

Our ‘soup kitchen’ is open every Saturday night, with our lovely asylum seeker and refugee chefs preparing meals that we donate for free to anyone in need. You can find out more or support the project here: https://www.patreon.com/supportparliamentonking

My favourite thing at Uma has to be Sally’s dahl curry, which I eat with a roti and a little of her shrimp sambal. It makes me happy, it reminds me of my aunties cooking, it reminds me of home, of being loved and it’s just lovely.

This week for our takeaway and home delivery menu we’re offering 4 of our favourites from the Uma menu in Darling Square; the ones that are always on the menu, the ones that we’re always asked for. Really beautiful, really thoughtful and flavoursome dishes, the ones Sally is famous for: and my favourite dhal is there too.

Here’s something wonderful: food from the homelands of our asylum seeker and refugee chefs – made with love, like they make it at home for family and friends. Pick up or delivery, a new menu from Uma.

This week’s stand out has to be Sally’s Barramundi Belly Curry.

This curry was a revelation, I’d never had it before this week, but Sally (our head chef) tells me that it’s rather a famous Burmese delicacy.

I watched her make it, it’s rather complex, and it takes a while. First, she fillets the Barramundi Belly, then pan fries it in vegetable oil until the skin is crisp, but the flesh tender. Only then does she add the rest of the ingredients, slowly tossing and folding it together.

The result is the is beautiful fresh, golden and tender dish, that’s as gorgeous to look at as it is delicious – my new favourite curry.

There’s also a few new wonders this week, such as the vegan Green Tomato Salad and this incredible prawn and vegetable curry.

Celebrate Diwali with us: Pick up or delivery - Uma, food from the homelands of our asylum seeker and refugee chefs – made with love, like they make it at home for family and friends. A new and special Diwali menu for you!

Diwali is a festival of lights and one of the major festivals celebrated by Hindus, Jains, Sikhs and some Buddhists. This year, Diwali is Thursday the 4th of November, but celebrated for days.

Traditionally, families and friends come together to feast on vegetarian delights with rich and fragrant dhals and curries.

Sally’s food always reminds me of my auntie’s curries, and I probably won’t get to spend Diwali with her, so there are more than a few of these that me and the family will be sharing instead.
