🧪Fermentation.

Where microbes break down the sugars and sticky mucilage around the coffee seed. Different microbes = flavour transformation.

Fermentation kept to a minimum. The clearest reference point for the coffee itself. The “before” picture.

Nature takes the wheel. Coffee is fermented with local microbes present in the environment.

No.03 🎈LACTO
A selected lactic acid bacteria culture is introduced. Same coffee. New microbial crew.

No.04 🟡YEAST
A selected yeast culture takes over. Another tiny change, another completely different cup.
