🌶️ Red Thai Coconut Curry Chicken Meatballs 🥥
This was absolutely outstanding! I made this a couple of months ago, but this time I made my own chicken meatballs and it was even better. Creamy, full of flavour and so easy to make!
Serves 3
Chicken Meatballs
* 500g chicken mince
* 5 spring onions, finely sliced
* 1 red chilli, finely diced
* Handful of fresh coriander, chopped
* 1 tsp salt & pepper
* 1 tbsp garlic & ginger paste
Coconut Curry
* 1 red pepper, sliced
* 1 red onion, sliced
* 1 tbsp ginger paste
* 3 garlic cloves, minced
* 3 tsp red Thai curry paste
* 1 tbsp fish sauce
* 1 tbsp brown sugar
* 1 x 400ml can coconut milk
* 1 tbsp smooth peanut butter
* Fresh coriander to serve
Method
1. Add the chicken mince, spring onions, chilli, coriander, salt & pepper and garlic & ginger paste to a bowl. Mix until just combined, then roll into approximately 12 meatballs.
2. Heat a drizzle of oil in a large frying pan over medium heat and cook the meatballs for 10–12 minutes, turning regularly until browned and cooked through. Remove and set aside.
3. In the same pan, cook the red onion and red pepper for 5–6 minutes until softened.
4. Add the garlic, ginger paste and red Thai curry paste and cook for 1–2 minutes until fragrant.
5. Stir in the fish sauce, brown sugar, coconut milk and peanut butter. Mix well until the peanut butter has melted into the sauce, then simmer gently for 5 minutes.
6. Return the meatballs to the pan and simmer for a further 2–3 minutes so they’re coated in the curry sauce.
7. Finish with fresh coriander and serve over jasmine rice.
This is one of those meals that’s packed with flavour, comes together quickly and tastes like takeaway… only better! 😍
