I got heaps of betal leaves growing in my backyard. There are a few menu that I can use betal leaves. However, I started with Mieng K*m. It is a Thai snack that is great to have in a warm day.
Firstly, I had to roast the shredded coconut and peanut, and then cut ginger, lime with skin and red onion into mini dice size. Secondly I made a salty sweet sauce. Finally, I cut cooked and peeled prawns into half inch long, and fresh chilli.
After preparing everything, I put all the cut up ingredients, roasted coconut, roadted nut and some sauce on betal leaves. Now ready to eat by folding the leave with ingredients and eat all at once. Very refreshing you can taste a bit ginger, lime and salty sweet sauce and can feel the crunchy texture of coconut and peanuts.
Fyi. The original recipe use dried shrimps rather than cooked prawns.
