🍋 Creamy Lemon Blondies

Makes: 18 pieces
Oven: 170°C fan-forced

Lemon Blondies

Ingredients

- 180 g plain flour
- 1½ tsp baking powder
- ¼ tsp salt
- 150 g caster sugar
- 80 g unsalted butter, softened
- 40 ml neutral oil (≈37 g)
- 3 eggs
- 120 ml milk
- 1½ tsp lemon extract
- OR: 1½–2 tbsp fresh lemon juice if you don't have lemon extract
- 1 tsp vanilla extract
- Zest of 1 lemon
- ¼ tsp yellow food colouring
- ¼ tsp milk, mixed with the food colouring

Method

1. Preheat oven to 170°C fan-forced and line your baking mould.
2. Mix flour, baking powder and salt in a bowl. Set aside.
3. In a separate bowl, beat softened butter, oil and sugar until pale and fluffy.
4. Add eggs one at a time, mixing well after each.
5. Add lemon extract (or the lemon juice substitute), vanilla and lemon zest.
6. Add the dry ingredients in batches, alternating with the milk. Mix just until combined.
7. Mix the yellow food colouring with ¼ tsp milk and add to the batter.
8. Pour into the lined mould and smooth the surface.
9. Bake until cooked through and a skewer comes out with a few moist crumbs.
10. Cool completely before glazing.

🍋 Creamy Lemon Glaze

Ingredients

- 160 g icing sugar
- 1 tbsp condensed milk
- ¾ tsp lemon extract
- OR: 1½–2 tsp fresh lemon juice if you don't have lemon extract
- 1½ tbsp milk

Method

1. Add icing sugar, condensed milk and lemon extract (or lemon juice) to a bowl.
2. Add the milk and whisk until smooth, creamy and glossy.
3. If too thick, add milk a few drops at a time.
4. If too thin, add a little icing sugar.

Finishing

1. Once completely cooled, trim the rough edges and lightly level the top.
2. Spread the lemon glaze evenly over the blondie.
3. Cut into pieces.
4. Sprinkle with sugar sprinkles and cake crumbs.
5. Refrigerate and serve chilled.

🍋 Lemon Extract Substitution — Quick Reference

For the blondie batter:
1½ tsp lemon extract = 1½–2 tbsp fresh lemon juice

For the glaze:
¾ tsp lemon extract = 1½–2 tsp fresh lemon juiceOne

🍋 Small Note: If you’re using fresh lemon juice instead of lemon extract in the batter, keep the lemon zest as well.

🧁 Soft Marble Cupcakes

Ingredients

- 150 g unsalted butter, softened
- 120 g sugar (or 90 g for a less sweet version)
- 3 large eggs
- 1½ tsp vanilla extract
- 150 g sweetened condensed milk
- 180 g all-purpose flour
- 1½ tsp baking powder
- Pinch of salt
- 1–2 tbsp milk (if needed)
- 2¼ tbsp cocoa powder

Instructions

1. Preheat your oven to 170°C and line a muffin tray with cupcake liners.

2. Beat the softened butter until creamy.

3. Add the sugar and beat until light and fluffy.

4. Add the eggs one at a time, beating well after each addition.

5. Mix in the vanilla extract.

6. In a separate bowl, combine the flour, baking powder and salt. (Or, if you're in a hurry, simply add them one by one to the wet ingredients for better incorporation! 😉)

7. Add the condensed milk and beat until smooth.

8. Gradually fold in the dry ingredients until just combined.

9. If the batter seems too thick, add 1–2 tbsp milk and mix gently.

10. Divide the batter evenly into two bowls.

11. Add the cocoa powder to one portion and gently fold until combined. Avoid overmixing to keep the batter light and fluffy.

12. Fill each cupcake liner about ¾ full, alternating spoonfuls of vanilla and chocolate batter.

13. Use a toothpick or fork to gently swirl the batter for a marble effect.

14. Bake at 170°C for 18–24 minutes, or until a skewer inserted into the centre comes out clean.

15. Cool in the tray for 5 minutes, then transfer to a wire rack to cool completely.

- Don't overmix the batter after adding the flour.
- Gentle folding = softer, fluffier cupcakes.
- Perfect with a cup of tea or coffee!

🍞 Soft & Fluffy Dough Recipe

✨ Ingredients

2 cups all-purpose flour (maida)

1 tsp sugar

7g yeast (1 sachet or 2¼ tsp)

½ cup warm milk

½ tsp salt

4 tbsp oil

1 egg

✨ Method

1. In warm milk, add sugar and yeast. Mix, cover, and let it sit for 5–10 minutes until foamy.

2. In a bowl, combine flour and salt.

3. Add the yeast mixture, egg, and oil.

4. Mix and knead until a soft, smooth dough forms.

5. Cover and let the dough rise in a warm place for 45–60 minutes or until doubled in size.

6. Punch down the dough and shape as desired.
