Behind the Barra kitchen is Alejandro, a chef who grew up eating the food we cook. Chilean-born, with a palate shaped by the Pacific coast and a deep respect for the ingredients it gives us. Come sit at our table.

July is Peruvian Independence month and the perfect excuse to talk tiradito: kingfish sliced sashimi-style, no marinating, just a rocoto-spiked tiger’s milk poured on at the end.

Tiradito is a Peruvian coastal dish shaped by Japanese immigration - what’s known as Nikkei cuisine - going back to the late 19th and early 20th centuries. The Japanese touches (katsuobushi, tobiko) aren’t an accident either. They’re a nod to that same wave of immigration that shaped Peru’s coastal cooking over a century ago.
