It is the crunch that surprises people.
Quẩy arrives light and hollow and still warm, and for about two seconds it stays that way. Then you tear a piece, hold it under the broth, and it becomes something else entirely. Soft, heavy, carrying more of the bowl than seems fair.
That is the whole point of it. Not a side and not a garnish, just a second way to get at the broth.
