Reflecting on attending the recent Australian pizza championships in Sydney as a visitor got me thinking of 2023, competing in the World Pizza Championships in Parma against 800 competitors around the world.
What a thrill that was to be apart of something so special.
However, I've recently taken a step back from the desire of wanting to compete as I've had mixed thoughts and feelings surrounding what would make the best pizza chef, and of recent years working on my own hybrid versions of blending my favourite styles of pizza together to create something completely unique.
Would it impress?
Or would it turn them away from being seen as non traditional?
I love and respect the concept of competing and representing yourself, your brand or your country, but I donโt know if that's everything that makes us love our craft.
As I work towards finding a new venue in the Ranges to call S.O.P home, I personally can't wait to show off what I think defines true pizza making.
Rather than the best pizza chef awards, but the art of crafting uniqueness in its own way that no one can replicate.
This is only the beginning to something great.
