After a series of amazing test popups, we are beyond excited to be launching brand-new website for Wimmera Dumpling Co.! 🥳

We'll still be slinging coffee during the day! We’re rebadging our beloved coffee popup trailer for the afternoons and evenings, bringing you dumplings steamed fresh to order at events and popups all across the Wimmera Mallee region.

Our secret? It’s all in the handmade sauces. We’ve been blown away by your feedback—some of you even told us, "you should bottle this sauce!" Come try our Thai Red Coconut Curry, the Crispy Chilli Oil with Black Vinegar, or our Ultimate Dumpling Sauce (a perfect drizzle of soy, sesame, and honey happiness). 🍯🥢

Morning Dimmy — I'm up and open from 7.30am at the holiday park!

The grills hot, coffee's on, and I've got a small but very good menu today:

WAFFLES WITH BACON FOR BRUNCH
Two golden waffles piled with Australian bacon, fresh lettuce greens, crispy onion, and my warm chipotle honey BBQ sauce. Eat it with a fork, or be a hero and sandwich the two waffles together.

THE BLT
Proper Aussie bacon, lettuce greens, tomato relish and Kewpie mayo on a soft milk bun. Comes with a side of crisps for that perfect crunch. Contains wheat, milk, egg, dairy

**Dimboola Riverside Holiday Park (Dimmy) | 8am to 11am**
**This weekend's specials:**
- **Waffle Bacon Stack** — crispy waffles, Aussie bacon, whipped avo, kewpie mayo and lettuce leaves. Eat it loaded, or flip it and make it a sandwich. No rules.
- **The ULTIMATE BLT** — thick Aussie bacon, heirloom tomatoes, lettuce, kewpie mayo, house tomato relish. It's deliscious.
- **Portuguese tarts + chocolate croissants** — warm, flaky, made for a second coffee.

WE'RE CHANGING OUR PORK DUMPLINGS!
The feedback on our dumplings has been great, the sauce so good that people have suggested we bottle it but, deathly silence on the pork dumplings! Wimmera Dumpling CO. is getting ready for a launch, and I am still working out kinks... The prawn, chicken and vegetable dumplings have gone well but the pork dumplings don't seem to steam as well so, this weekend we are trialing a new pork and chive dumpling. You can try these are this Saturday for lunch.... more details soon!

Our cute little ice cream trailer is ready for you to create your own ice cream masterpieces. Choose real soft serve, then load up with 30 toppings, sauces and more, all included in your ice cream price.

More changes to Sugar Baby! 🍦✨

We've been tinkering again:

New coloured light above the ice cream dispenser. It's pretty, and it should also help keep the bugs away at night
Fresh pink vinyl tiles on the sides below the dispenser for easier cleaning
A new front skirt under the dispenser, again for easier wipe-downs
Plus a few minor repairs and tidy-ups
We've also been testing coloured lights on the outside. Once the permanent kit arrives, we'll be able to light Sugar Baby up in any colour to match your event or wedding theme.

Dimboola Dash is ON tomorrow, and we’ll be there! 🏃‍♂️☕️
We are so excited for tomorrow's event! Here is everything you need to know to get your coffee and breakfast fix with us:
We’ll be set up and open from 8:00 AM until 12:00 PM right behind the library. Come find us for your morning fuel! We are serving up our St. Ali Coffee range, alongside comforting hot chocolates and warming chais.

To make sure you get your orders as smoothly as possible, we are doubling down on our kiosk ordering system. It’s been super popular, allows me to concentrate entirely on crafting your orders, and it even pings you when your breakfast is ready!

Speaking of breakfast, our baked treats will be fresh and ready. We’ll have Portuguese tarts (baked fresh at 7:00 AM!), buttery croissants, and maybe even a loaded scroll or two if you're lucky.

If you're after something savoury, we are serving up a classic BLT featuring heirloom tomatoes, kewpie mayo, and delicious tomato relish.

For something truly special, try our waffles! We’re topping them with bacon, a maple and chipotle BBQ glaze, and fresh lettuce greens. If the power holds out, there might even be a crispy onion addition! You can tackle this with a knife and fork, or flip it over and eat it as a very naughty sandwich. We’ll also have sweet crepes drizzled with a fresh berry sauce and served with ice cream.

That’s what we have going on, but Dimboola has so much more to offer tomorrow!

The Dimboola Store will be open, serving up their fantastic breakfast menu (Decaf lovers should head here, BB is NOT doing decaf in the morning). If you are craving a classic, the Dimboola Cafe will be open for fish and chips. The DPA will be running a classic sausage sizzle, and most of the shops around town will be open for you to browse.
