Captivating words from one of Australia's best Chefs and more than enough reason to warrant a trip to Pho 7 Days.
Northgate has a food court that would put Hobarts to shame, if the capital city actually had one. There is plenty of choice here, from Nepalese to KFC and much in-between. Pho 7 Days has a number of noodle soups on offer alongside a selection of other Vietnamese dishes such as banh mi, rice paper rolls, stir fries, and salads. There's not much to distinguish them from their neighbours at a glance apart from the fact they prepare their food to order, it's not dished from a bain marie.
The wait isn't long though and a buzzer is given so you can grab a table and relax. Service is as friendly as you could expect given the limitations in place and it's refreshing to receive a tray laden with real utensils and bowls in what is increasingly a disposable world, even when eating in.
Combination beef pho is chosen and from the first mouthful it's apparent that Philippe is on to something here. The 8 hour stock is indeed subtle but also wonderfully complex and outstanding, there is much to appreciate. Silken noodles tender and enveloped with the flavour of the soup. Different cuts and preparations of beef providing a mix of textures. Wonderful.
Sides were simple. A ramekin of hoisin sauce with a dab of sweet chilli in the centre. A bowl of vibrant and crispy bean sprouts. Some fresh herbs and chilli would have lifted it to perfection, but as it stood it is definitely worth searching out to experience.
