Life lately! Missy only made 1.5 days of school before having the rest of the week off.
Poor kid.
So it’s been dinner shopping from the garden, baking and building more garden beds with mushroom compost. Scored a few feeds off the compost, I think they did something to my brain 🤣 I feel like baking again.
I had a moment of what if these aren’t all edible 🍄 so I just ate them, and lived to tell the tale. Now the fam bam is getting oysters mushys with every meal 🤣

Steps, cooked within 10 minutes of picking.
There is something that connects us to our innate state of being.
No sprays, no chemicals just creating micro eco systems that are working in symbiotic relationships.
It’s unquantifiable the times this little patch of mine has improved my mood, moved my body and provided enjoyment.
Planting a garden is a symbol of hope, even better if you can feed your family from it!
In less than 3 months we are largely eating most of our veg from our garden. Can’t wait till spring when it will truly start to produce more variety!
You just gotta start 🩷

Rett you cruel bastard, witnessing her slowly losing her mobility weighs so heavy on my heart.
Unlike the first progression of Rett which was swift and sharp, over weeks.
Little bit by little bit her motor skills are declining.
Over the school holidays it becomes more apparent, sort of like a benchmark.
Motor planning challenges increasing and there is not much we can do to stop it… except keep moving. Yesterday 2 hours walking in the pool, looks like nothing to most but for her it’s a safe space she can keep moving for a long time. Out of the pool in unfamiliar places she is lucky to to take 10 steps.
I have moments of thinking I’m not doing enough, ya know parent guilt is alive and well.
If I allow the grief to consume me I would not function at all.
The goal is to keep her happy and lift her spirits however and whenever I can.
She is such a little trooper.
In this pic she was sad, I can feel it when she is, watching all the other kids play.
This morning the sun is shining and she is happy! We grab those moments with both hands with gratitude and a moment of lightness. 🩷

Lots of seeds directly sown.

Four spelt loaves , the broccoli has finally arrived, the snow peas are taking off, and the brassicas are loving this weather. 🩷

Snail patrol was also in full swing tonight. Eviction notices were issued immediately. 🐌📋😂

Less than 9 weeks and I’ve had a little harvest to make more room .
Always cut the lettuce at the stalk and leave the roots in the soil, leaving structure, nutrients and living compost.
The best part of growing food is sharing. Always plant extra to get the feel good vibes of giving to others.

Early morning starts mean I am ready for brunch after school drop off!
OMG this so Delish!
If you love eggplant you will love this and so easy!

Roasted Eggplant Dip 🍆

One of those recipes that looks a bit rustic on the plate but tastes like you’ve put in far more effort than you actually have.

You’ll need:
• 1 large eggplant, sliced
• Garlic oil (see note below)
• About 8 roasted garlic cloves
• ½ cup tahini
• 2 generous dollops Greek yoghurt
• A handful of fresh dill
• A handful of fresh parsley
• Salt and freshly ground black pepper
• Extra garlic oil for drizzling

Method:

Coat the sliced eggplant in garlic oil and bake at 200°C for around 25 minutes, or until golden, soft and beautifully caramelised.

Transfer the eggplant to a plate and mash with a fork. As you mash, you can pull out any larger pieces of skin if you like. Personally, I leave most of it in. That’s where a lot of the flavour lives.

Add the roasted garlic cloves and continue mashing until combined.

Stir through the tahini, Greek yoghurt, dill, parsley, salt and freshly ground black pepper.

Give everything a good schmush together right on the plate. No food processor required.

Finish with a drizzle of garlic oil and serve.

Today I enjoyed mine with slices of homemade spelt bread that were just starting to go stale. Turns out slightly stale bread is absolutely perfect for scooping up this smoky, creamy dip.

Garlic Oil Note:
My garlic oil is simply whole garlic cloves roasted in about ½ cup olive oil until soft, sweet and golden. I usually throw in around two dozen cloves because there is no such thing as too much garlic in this house.

🌿 Simple ingredients.
🌿 Fresh herbs from the garden.
🌿 Real food.

Made this little kitchen pouch for a dear friend who’s having a rough time, she wants to grow food but just can’t atm.
Went to deliver it yesterday in my garden attire which may not include restrictive under garments, I didn’t account for people actually seeing me in public so I came home to rethink my delivery attire, will attempt again today 😂

In the bag is:
