Even though I’m focusing on cheesecakes at the moment, this was a special order I just couldn’t say no to. 😁
So I challenged myself to create this moist vanilla sponge with raspberry compote and a light cream cheese & mascarpone frosting. I chose it because I’ve always preferred it to traditional buttercream. I love how light and creamy it is without being overly sweet. 🍰

I have to admit, writing the sign made me a little nervous. One wrong move could have ruined the whole cake! 😅

Wishing the mum-to-be a beautiful baby shower and all the happiness for her and her little one. 🩵

🧡I love Biscoff, but I get over the sweetness quite quickly.😅

So when creating this cheesecake, I tried to make the vanilla filling lighter and creamier to balance the sweetness of the Biscoff and let its caramelised biscuit flavour shine.☀️

✨ The last flavour in my current cheesecake collection… 🧡 BISCOFF 🧡

When I created one for the Oreo lovers, I just had to make one for the Biscoff lovers too. 😁

A buttery Biscoff biscuit crust, creamy vanilla bean cheesecake, topped with smooth Biscoff spread, whipped cream and Biscoff biscuits.

Any Biscoff lovers here? 🙋🏻‍♀️

When I was creating my recipes, my daughter didn’t want to miss out and had to try everything… and “unfortunately”, she liked them all 😂🍰

Guess what she says now every time I ask her what she wants for lunch... 😅

Here she was testing the Whipped Vanilla Bean version 🍦🤍

(I did skip the cappuccino one for her though — she definitely doesn’t need any extra energy 😆☕️)
