🇬🇧 COQ AU VIN – YOUNGBLOOD STYLE 🍷🍗
Tender chicken, vegetables and potatoes slowly braised in a rich red w**e sauce and served on a bed of creamy mashed potatoes. Pure comfort food! 😍
INGREDIENTS:
Chicken pieces of your choice
a little oil for frying
3 large yellow onions
2 garlic cloves, chopped
3 carrots, peeled and sliced
1 can sliced mushrooms
2 Knorr Bouillon Pur
approx. 2.5 tbsp beef bouillon powder
3 tbsp tomato paste
approx. 550 ml good red w**e 🍷
approx. 1 litre water
salt & pepper
small potatoes, peeled and quartered
a little cornstarch or roux to thicken the sauce
creamy mashed potatoes for serving
METHOD:
Brown the chicken pieces well on both sides in a little oil, then remove them from the pan.
Sauté the onions, carrots and mushrooms in the same pan. Add the chopped garlic only towards the end and sauté briefly so it doesn’t burn.
Add the bouillon and tomato paste and cook briefly. Deglaze with the red w**e, then add the water and beef bouillon powder. Season with salt and pepper.
Return the chicken to the pan, cover and gently braise for about 40 minutes.
Add the raw quartered potatoes, cover again and continue to braise gently for another 20–30 minutes until everything is beautifully tender.
Finally, thicken the sauce with a little cornstarch or roux.
Serve on a bed of creamy mashed potatoes and enjoy! ❤️🍷
