Festive Red Velvet Swiss Roll

For the pattern
1 egg white
11/2 tblsp butter
2 tblsp castor sugar
4 1/2 tbslp flour
Few drops of almond essence (optional)
Any patterned stencil. I printed mine from the net.

Mix above ingredients together to form a paste. Place stencil onto baking tray, place baking paper on top and pipe pattern.
Place in fridge for about half an hour until it hardens.

Ingredients
3 eggs separated
125ml sugar
125 ml flour
Pinch of salt
Half tsp baking powder
1 tsp vanilla essence
2tblsp cornflour
5ml lemon juice
3 and half tsp cocoa
Red food colouring
Toasted coconut for butter cream (optional)

Method
Whisk eggs white until stiff. Add in yolks, vanilla essence, lemon juice, food colouring and beat for half a minute. Add in flour, cornflour, cocoa powder, salt and baking powder. Fold mixture.
Bake at 180 deg for 12 minutes.
Once out of oven allow to stand for 5 minutes then turn out onto baking paper and roll. Allow to cool completely. Spread with butter cream or cheese cream. Wrap in a tea cloth for about 15 minutes. Place in fridge for 10 minutes to set.

Burfee cake recipe

Ingredients

Ingredients for the cake

125g soft unsalted butter

1 cup castor sugar

3 large eggs

1/2 cup full fat milk

1 1/2 cups cake flour

3 teaspoons baking powder

1 teaspoon vanilla extract

1/2 teaspoon freshly ground cardamom

Pinch of salt

Ingredients for the ganache

110 g white chocolate

25 g butter, unsalted is best

Method

1. Preheat oven to 180Β°c.

2. Whisk softened butter and sugar until light and creamy, add in 1 egg at a time and whisk until just combined.

3. Sift all dry ingredients and add it slowly into the wet ingredients whilst whisking.

4. Add milk, vanilla extract and salt and mix until just combined.

5. Pour batter into prepared pan and bake for 30 minutes.

Method for ganache

Pour rhe butter and chocolate pieces into a bowl and heat up at 30 second intervals until the chocolate is completely melted, cover with cling wrap to prevent a skin from forming. Once the cake is cooled pour the ganache on and decorate with crumbled burfee and tinted almonds.

CRISPY CHICKEN STRIPS πŸ˜‹
Ingredients :
3 eggs
2 Chicken fillets
2 cloves garlic
2 tablespoons of spices
2 tablespoons corn starch
Oil
Lettuce
1 spoon of salt
Preparation :
1. Separate egg yolks and egg whites.
2. Cut the chicken into strips. Mix with egg yolk, garlic, spices, salt and starch.
3. Beat the egg whites in a bowl. Pour the oil into a pan.
4. Dip the chicken in egg whites. Grill. Decorate with lettuce and tomatoes.

Bounty cake

1/4 Ib butter
1/2 cup castor sugar
3 egg yolks (large)
1 cup flour
1 1/2 teasp baking powder
2 tablespoon nestle cocoa powder
3/4cup milk

Coconut filling :-

3 egg whites beaten stiff
1/2 cup icing sugat beat stiff
1 1/4 cup coconut
Mix in lightly

Method for cake:-

Beat butter well till pale
Add castor sugar n beat well again
Add yolks 1 at a time and beat well
Add sifted flour, baking powder and cocoa (sift 3 times) together with milk
Pour 1/4 mixture in well sprayed pan
Layer coconut mixture gently and evenly over
Spread remaining cake mixture over coconut evenly
Bake on180 degrees +- 40 min till done
Pour melted cadburys choc mixed with nestle cream over
Sprinkle with flake if you like.

Hot Cross Buns
Dry ingredients
2 n 1/2 cup cake flour
1/4 cup sugar
1/2tsp cinnamon pwd
1/2 tsp All spice pwd
2tsp yeast
1tsp orange zest

Wet ingredients
1/2 cup warm milk+ 2 Tablespoon
1egg
1tsp vanilla essence
3 T butter( melt when warming milk)
(Beat egg into warmed milk mix)

Put dry ingredients into wet
Mix together until ingredients are combined
It will appear sticky
Cover with cling and put in a warm area for 1 n 1/2 hours

Soak 3/4 cup raisins in hot water for 15 minutes
Remove n dry them

When dough has proofed
Empty on counter.( No oil no flour on counter)
Using the bottom of your Palm,push away,and pull back with fingers
Do this for 6 minutes
When dough comes together
Dust counter with little flour n roll out your dough
Put your raisins in centre and cover the dough over
Work into a roll,and cut out 12 pieces
Roll each piece into a ball, concealing the fruit
Lay twelve rounds,on a tray lined with parchment paper
Cover n leave for 20 minutes,to proof further

To make the cross

1/4 cup flour
2 T water
Make a paste, work out lumps
You can pipe a cross over each bun
I just used a tsp and guided it into a cross.
You now ready to bake

Bake In pre heated oven
When it browns it's done
Mine too k bout 15 to 20 min

Brush with apricot preserve when you remove from oven
this will give you that original gloss n improve the flavoured n aroma πŸ‘Œ

LEMON JAM πŸ˜‹
Ingredients:
700g lemons
600g of sugar
1L of water
Vanilla extract
How to use:
1. Cut the lemons into slices and put them in the pot.
2. Pour the water and bring to a boil.
3. Also sterilize the jars by soaking them in water (on fire) for 30 minutes.
4. Place the lemons in a bowl and blend in a blender or food processor, then pour into a saucepan and place the first half of the sugar, then place the rest.
5. Also add the vanilla extract and bring to a very low heat for 30 minutes.
6. Then pour into the jars, seal and turn upside down.
7. Let them cool completely.

Homemade Churros

Homemade churros are delicious and popular in many cultures. Prepared with a simple batter of flour, water and salt, they are fried until crispy on the outside and soft on the inside. They are ideal to accompany with hot chocolate or sprinkled with sugar and cinnamon.

Ingredients:

β€’ 1 cup (240 ml) of water
β€’ 2 tablespoons of sugar
1/2 teaspoon salt
β€’ 2 tablespoons of vegetable oil (can be corn, canola or sunflower)
β€’ Additional sugar for dusting

Preparing homemade churros is a delicious culinary adventure. Gather flour, water, and salt for a dough, then fry it until golden brown churros and sprinkle with sugar.

Preparation

In a medium saucepan, heat the water, sugar, salt, and 2 tablespoons of vegetable oil. Bring the mixture to a boil.
Once the mixture is boiling, remove the saucepan from the heat and add the wheat flour all at once. Stir quickly with a wooden spoon until the dough forms a ball and pulls away from the sides of the pan.
Transfer the dough to a piping bag fitted with a large star tip. Let the dough cool for a few minutes.
Meanwhile, heat enough oil in a deep skillet to fry the churros. Oil temperature should be around 180-190Β°C (355-375Β°F).
Squeeze the dough directly into the hot oil in about 6-inch (15-cm) long strips. You can use scissors to cut the dough.
Fry the churros in batches, avoiding overcrowding the pan. Cook until golden and crisp, about 2-4 minutes per side.
Remove the fried churros and place them on absorbent paper to remove excess oil.
In a shallow dish, mix cinnamon sugar to taste. Pass the churros through this mixture so that they are evenly covered.
Serve the churros hot and enjoy them with hot chocolate, dulce de leche or simply on their own. Ready! Now you can enjoy delicious homemade churros. Remember that cooking times can vary, so keep an eye on the churros as you fry them to make sure they are golden brown and crisp. Enjoy!
